Title: Any good ideas for thanksgiving smoker?

Just cruising some recipes for my smoker. I want to do something for turkey  day. We will be doing thanksgiving at our place this year. Still doing a large turkey in oven so this would be just a side dish deal. Preferably something not super complicated.
6 adults and 2 kids
Smoker is a digital Bradley.

Thanks for the ideas......

Cornish game hens! Brine them in cranberry and apple juice so good.

Smoke some salmon/steelhead in your smoker. Make sure you have at least 1lb of smoked skinless meat. Then crumble the smoked fish, add 2 packages of cream cheese, some chopped green onions and whatever else you want into it. Roll into a log place in refrigerator for about 2 hrs. and then you have the best freaking salmon spread anyone could ask for. Make sure you have an assortment of different crackers. Always a great holiday treat.

Smoked oysters
Smoked mushrooms
Badhabit's idea  :tup:  :drool:

I usually do like a pate. With enough mayo, horseradish for flavor and a binder. Then add your favorite's. Yellow. red, or green onion. Diced pickle and chopped pickled jalapeno's. Celery peeled and chopped. Basicly throw what ya like in the bowl. Be careful not to over mix. That makes mush. With your favorite cracker Ritz.
Season to taste salt, pepper, and maybe garlic and chili flakes.

Popper's are really a blank canvass. You make it with your favorite flavors

1 8oz cream chesse
1 tube pork chorizo or beef you decide.
melt together on a sautee temp.
you can also use diced onions what ever you choose.

I usually slice jalapeno long ways. Stripping the seeds. having hollow boat. Fill with your ingredients. Top with your favorite shredded cheese. I usually use pepper jack  :twocents:
Set smoker 250 degrees. Throw in the poppers for hour maybe hr an half. Depends on your al dent tay.......lol

Or use same concept but use Italian sausage mushrooms cream cheese garlic maybe bacon for the top with shredded cheese. Hope it gives ideas, any ?s just post...... ;)

Here's some simple idea's

slice jalapeno strip seeds. wedge of favorite cheese wrap in raw bacon pin with tooth pick. When the bacons done, your eating.
Also ricotta with a pineapple chunk  :drool:

Remember anything you can put in a oven, you can smoke. The only limitation is your imagination  ;)

I would love too. Wife sais no, she wants a big one done in oven.. I did a pepper crusted turkey breast  few years back, turned out great. I got that recipe I off the Bradley website.
Tossing around the ribs idea.

Take water chestnuts cut in half wrap with bacon Speer with toothpicks roll in light brown sugar and smoke/cook till bacon is done people will go nuts for them !

Jalapeno peppers, 4 plants of the large variety that went nuts. I did a few in the smoker with cheddar, but i think they needed something more.

Brine for smoked turkey. Enough water to cover turkey, about 2 gallons. About 2 cups of brown sugar, 4 cups of maple syrup. About 1 cup of salt. You can brine whole or cut up, I personally quarter. I brine for 24 hours. Throw in your smoker......Eat  :)

Brisket.  You could slice it as another main dish, appetizer, or whatever.  The turkey might go to waste though....

I do something similar, I use little smokies, jalepeno cream cheese, but I wrap in bacon before it goes into the smoker.

I make my best attempt to catch a steelhead every year at the river near my house right before thanksgiving and christmas , I put it in a little less salty more sweet brine and smoke er up with some alder and cherry and just set it out on the table by itself  with the other goods and its always a HUGE hit !

have always done 2 turkeys, (1) whole oven or deep fried and (1) butterball breast in smoker then baked.. the breast fits nicely in most small smokers and the oven is required to actually cook it after a few hours of smoking.

Yes, but I won't take credit for the recipe. go to bbqaddicts.com and follow the recipe for Atomic Buffalo Turds. Trust me, you'll be glad you did. Also, don't be scared to do a few with habenéros. They are hot, but that's why God invented beer.

For jalapeno poppers in the smoker, I used to cut them long ways and then wrap with bacon...

I just dice up the bacon really small, cook it, then melt in the cream cheese, and then stuff the jalapeño.  Then I smoke for 2 or 2 1/2 hours at 150-160 until the jalapeños look a little wilted.  They are always the first thing gone.
