Title: Turkey Recipes

Alright guys, it's that time of year...

Let's hear your plans on how to make the best Thanksgiving turkey!

I think I'm going to do two this year - one roasted in a bag in the oven and one on the grill, but I haven't figured out the details... Anybody cook them in the smoker?

I do mine on the Weber kettle, and they're fantastic. I brine overnight. Put a disposable deep roasting pan in the center of the charcoal grate, and put 1/2 of the lit charcoal on either side. Line up the handles on the cooking grate over the charcoal so you can add charcoal and wood chips as necessary. Rub the bird down with Salt, pepper and olive oil. Mmmm

I make a turducken every year. Bacon and sausage  between each layer then smoke for a couple hours and finish in the oven.

If I have a wild bird I brine overnight.  Then smoke in big chief for a few hours.  Then put it in an oven bag and drape with bacon.  Cook.  The bag and bacon helps keep it moist.
