This weekend I've been shooting collared doves and nutria with my family. I've already got a dove plucked and in the fridge with maybe more to come. Any recipe recommendations?

Breast it, cut into medallions about the size of a "Silver Dollar", add a tablespoon of cream cheese to one medallion, and either a spicy bread/butter pickle or a jalapeņo slice. Cover with another medallion. Wrap with bacon. Secure it with a tooth pick and cook it on the grill until bacon is done. Dove breast should still be tender. A handy trick is to start with the bacon on the tray then build the wrap so all you have to do is role it up.
Works with duck too.
