Ok guys I scored an awesome start to a smoker. It looks like it was a oven in a restaurant or something. So the problem is it has been sitting outside for some time so I want to replace the regulator and thermostat and that is the problem. I have no idea what I'm doing when it comes to that part can anyone help. I'd just remove it and add a secondary chamber or use the bottom with a hot plate setup. Add some venting and rack mounts.

agree I would dump all of the old stuff and replace with an aftermarket burner and a good digital thermometer if you want to stay propane if you don't mind electric get a double hot plate from amazon and plug it in.

This is probably what I will do but I really like the idea of having the thermostat.

Get the model number off of the gas valve. I can get you a cost on one.
Is it set up for Natural Gas or Propane? Which are you wanting to use?
You will need a certain orifice depending on which fuel you want to use. The existing orifice size should be stamped on the orifice itself.
