I made a bunch of duck jerky for the first time and I think I did it wrong. I cleaned the breasts and soaked them in salt water for 10 mins, cut them up, and washed again until I saw no blood. Then I marinaded them for 1 day with soy sauce and other stuff. I did not know cures existed and didn't think anything about them. I put the meat into my oven at 170 degrees for about 4 hours. When I put the meat in the outside of the meat was lighter color and the middle was a little darker. Will I get sick for not curing the meat before dehydrating?

You don't need cure for the meat to be safe to eat.
What temperature did the meat itself get up to?

170 for 4 hours, depending on how thick your jerky was cut, should have got it plenty hot to kill any bacteria. Also you have plenty of salt in your marinade which also acts like a preservative. Eat it and make sure to keep it refrigerated and you should be fine. If you get the squirts......Throw it away. Lol.

There is no way the meat one, I am sure he beat the meat. :o Yep, things just got weird.
