Beaver back strap butterfly cut then marinaded in olive oil, worcestershire, garlic salt, onion powder and cracked black pepper cooked low and slow on the charcoal grill!

That kind of beaver has a square back strap?

I think I'm going to try pieces on the BBQ with the next beaver I get. My last one I just cut into bite size pieces and threw it in the freezer. Too small to cook on the grill.

Turned out awesome have some friends and family over everyone tried it and said it taste just like beef steak. Wife said its the best tasting wild game she has had by far. And this was a test piece! I still have 20lbs frozen in chucks im going to grind with bacon ends to make burger with. Definitely going to keep the back straps separate from now on to do this with!

there is a couple guys around my area that eat almost all the beaver. Even make BBQ ribs. I've had beaver steaks just fried and thought it was good. you guy ever do a beaver tail stew?

This is my first time eating it I have just been saving the back straps and the quarters to grind and make burger with. Im willing to try others if you have recipes? ?

Two things,
1. Fried Muskrat is pretty darn good.
Skin, hang for 3-4 days, cut in pieces, in frying pan with 1.5 onions boil in 0.3 cups lard and water till you cook off the 4 cups of water. (Season with a little garlic and pepper)
Brown and go hide from the kids cause once they try it you'll have to share.
2. Anyone ever tried Beaver liver?
We raised rabbits when I was a kid and the liver was second to none.
I love deer liver and imagine that Beaver liver would be good sized and worth the effort.

Haven't tried liver yet myself. I personally can't stand the texture of liver. But the wife liked the back strap so much she wanted to try more. So here is two hind quarters boned out, trimmed and cubed in the slow cooker with potatoes carrots onion celery sweet potatoes a beef bullion cube with water low and slow all day! Beaver stew THAT'S what's for dinner!

You guys are killing me, I want to try some. I have a colony just up the river from my house, but my neighbour thinks the Beavers are his pets. :lol4:

Yep and I still hang my deer in the front yard to skin it and have all my friends over for butchering parties with fresh racks of ribs and back straps straight onto the grill in front of them! Welcome to the real American dream neighbor! Self sefieciency is the best eating there is I don't need that gluten free soy base BS Starbucks crap in my life :lol4: :lol4:

Just have to set where he won't see it ;) I have two spots that are private land but the pond has a slide leading to the creek that is public waterway. Im trying to snag them in the creek on there way in and out
