anybody here make the switch from chicken to duck eggs? now that I know.... ducks are the only way to go.... absolutley no comparison... so glad to have a friendly farmer down the road....

I like duck eggs. Seems that most don't share that opinion. They don't seem to mix/scramble as easily as a chicken egg

I cant l say that I eat eggs to "eat eggs", we do the majority of our cooking from scratch, and use them as the backbone for pasta, breads, batters... they are definitely thicker, and more dense, but overall, a superior choice over chickens

The are awsome and work really well when using them for baking. I still prefer a fresh chicken egg over duck eggs for a plain old fried egg.

Cholesterol count difference ?
-
I was told they are double the cholesterol of a chicken egg.

I'm absolutely sold on them for baked goods and breads, and they make a good breakfast too. The best waffles we've ever made were with duck.
I have chickens in my backyard and I mostly stick to my own eggs, but when making something special (e.g. christmas cookies) I buy duck eggs. I've heard that turkey eggs are quite good too.

i can believe that cuz the yokes are about twice the size of a home grown chicken egg....delicious

Yeah duck eggs are like 2chicken eggs and turkey eggs are like 3 chichen eggs. When I had all 3 kinds laying I made a turduckhen omelet it was awesome but huge.

Love our duck eggs. Have 5 runners and 4 call ducks. Too many eggs to eat. Have no problems preparing them for breakfast a variety of ways. Don't bake much but heard they are good for that
Great for making a frittata on sun to eat for breakfast during the week

I've got 7 hens laying now, and have been freezing breakfast sandwiches on the weekends, freezing some for cooking, making hardboiled eggs, giving some away,...

Yolk is richer and bigger which gives a bigger flavor. Wife doesn't like to eat chicken eggs since we got got ducks
-
:yeah: They make especially great omelets. I think duck eggs are superior to chicken, but then again their diet is everything.
-
I think they taste better because of all the slugs they eat. 2c

I have never eaten duck eggs. If anybody ever cruises through Castle Rock and would like to sell a dozen, please let me know. I'd like to give them a try. Thanks.
