Title: bologna
Post by: brew on September 19, 2017, 09:59:50 PM
so i've got some down time from work while i'm taking care of the wife who had surgery this week and am trying some different recipies.  this one is a bologna recipie....not bad as it comes out almost as a meat loaf but has a deli meat taste---also as a bologna you know what ingredients were put into it....no lips or hips or whatever else doesn't rhyme

3 lbs ground beef
2 lbs ground pork
1 cup dry milk
12 ice cubes crushed
2 tsp sugar
2 1/2 tsp kosher salt
3 3/4 tsp pepper
1 1/2 tsp garlic powder
1 1/2 tsp cardamon
1 1/2 tsp coriander
1 tsp sage
3/4 tsp mace
3/4 tsp allspice

i mixed the meat with a kitchen aid with a dough hook then added the crushed ice .  add the powdered milk then the rest of the spices.  recipie called for it putting into a greased loaf pan but i put it in 2.  baked it at 275 degrees until the internal temp hits 160 ( mine was just over 2 hours).  sliced it then it is ready to eat
