Found this Video of breaking a deer down that is excellent. This is pretty much how I do it except I have different favorite cuts than he does and I don''t make jerky, for instance. Most anything I don't steak or make roasts of is burger. Burger is just too versatile. I use it in place of stew meat even. Instead of regular suet for burger, I've been buying cheap bacon for years to use as suet. It usually is more fat than other bacon and you have instant bacon burgers with no need to fry bacon separately. This is a good video for a first timer at butchering.
