Going in the sous vide tomorrow at 4:30 for 24 hrs.
Friday will be skinned, sliced, salt and peppered and into the butter or olive oil cast iron skillet for a crisp on each side.

I have to admit, the thought of eating tongue kind of grosses me out, but I do not think I have ever had it that I can remember.
Does it taste good?

The last two times ive had it, it was amazing. I'd take it over elk tenderloins. Hopefully it comes out just as good this time, though the last time was in a pressure cooker with a little wine and mushrooms cooked by one increbile woman chef in elk camp.

Like the best roast beef you will ever have with a good helping of horse radish. Don't leave out the bay leaf.

It's a tossup between tongue and heart, don't know if I could pick between the two. I have a killer recipe that has an incredible sauce and takes the better part of a day to put together. The meat is incredibly tender and tasty when you get it right. If not, well, just make sure you do it right.

What temp are you doing? I find for super tender I have to go at least 158 for 12-24.

Yes! If anybody is in the South Seattle area, Fonda la Catrina in Georgetown has killer Lengua (tongue) tacos, along with just about everything else on their menu.

Where did you get this beauty? I might try it. I've had tongue sandwiches during baseball trips at Katz's Deli and Carnegie Deli in NYC.

When I get my cow I make sure to get the heart and tounge. We've done ours in the pressure cooker, and yes they make awesome tacos!

Should be awesome.
I'm enamored lately with doing chuck roasts at 160 for 48-60 and then shocking and putting it in the fridge for 24. Then slicing. Seared before I put it in and add a tiny bit of olive oil and liquid smoke (along with whatever spice I want) and makes t the cheapest best lunch meat ever. I ran out of my own raised beef and have been using some painted hills from Cash and Carry.

Makes great tacos.I have never cooked it myself but a coworker used to bring them to work. They were excellent.

Oops, sorry for the delay. I would have said tacos. But it looks as though you made it to that conclusion already! Good looking food.
