Poach it in water for until it floats.
Take it out and let it cool on a broiler pan.
Sprinkle the fish with garlic salt lightly.
Cover the fish with cooked garden shrimp or cut up spot prawns.
Add shreaded cheddar cheese on top of everything.
Broil until the cheese is melted.

Your welcome, it will blow your mind.

I have a couple of easy go to recipes I use on most white fish - halibut, cod, rock fish and even walleye.

Fish fillets
Butter
Crushed Garlic
Hawaiian Sea Salt
Lemon Pepper
Dill Weed (optional)

Lay fillets out in 9" x 13" Pyrex dish
Melt 1/3 - 1/2 stick of butter in Pyrex measuring cup
Mix in crushed garlic and drizzle over top of fish
Sprinkle sea salt and other spice over top
Bake at 350 in open dish for 20 -35 min depending on thickness of fillets

The second one is just as easy -

Fish fillets
1 can petite diced tomatoes
1 medium onion diced
Crushed garlic
Hawaiian Sea Salt
Lemon Pepper

Lay fish fillets out in Pyrex 9" x 13" dish
Mix diced tomatoes, onion and garlic in a bowl
Sprinkle sea salt and lemon pepper over fish
Cover fish in tomato / onion / garlic mixture
Cover dish with foil tightly wrapped around edges
Bake 350 for 45 minutes

I serve both dishes with buttered fettuccine with parmesan, and fresh asparagus

I've done sausage and seafood gumbo with halibut and cod before. I can find the recipe if you want that. Otherwise for us it goes in the deep fry breaded with soupy pancake mix and then dropped into crushed up ritz crackers mixed with some Cajun seasoning. That's how I got my wife to try fish and she loves fish now. My father does chunks of halibut or various bottom fish in foil with hunks of butter, garlic, onions, and either lemon or lime both squeezed onto the fish and in chunks on top of it. Bake at 350. I can't remember how long he cooks it for lol.

Don't overthink halibut.  It is so good by itself you don't want to ruin how good it already tastes.  Best advice I have is don't overcook it and it will be good.

Beer batter and fries.  And coleslaw.  And beer.

Make a foil boat.  Mix Italian or panko bread crumbs with softened butter, salt and pepper into a thick paste.  Spread 1/8"-1/4" on the bottom of the foil approximate size/shape of the fillet and lay fillet on top.  Grill covered over medium heat until 115-120F on an instant read thermometer in the top center, or until the top of the thickest part of the fillet just turns opaque.  Use a spatula to serve crust side up.  So easy and good!  my go-to recipe for any white fish, for thin fillets less than 3/4" just eyeball, if buying fish or just lucky with the catch I prefer 2" thick fillets.

Slather in wasabi mayo and bake in 350 oven for 15-20 minutes or cooked through. Not my best recipe but hard to screw up unless over cooked.

Light sprinkle with Montreal steak seasoning, sear both side and toss pan in 400 oven to finish depending on thickness of fillets.
