Like the title says. Does anyone have a healthy recipe for jerky with no preservatives? My buddy in alaska is asking. He's trying to make deer jerky.

Soy sauce, beer, brown sugar, black pepper, garlic powder, onion powder, red pepper. Just enough liquid to wet the meat, no need to have it swimming in it.
Adjust spices to taste. I used to do this a lot with tuna and a few times with venison. The tuna was just sun dried.

I have used a number of different salt/sugar based recipes and always leave out the nitrites. Haven’t tried storing it for long period at room temperature but it lasts a long time in the freezer and I’ve had it out unrefridgerated for a weeks or so with no issues.

My marinade consists of one 10 oz bottle of Kikkoman Teriyaki Sauce, 3 Tbsp of brown sugar, and 1 tsp of Kosher Salt.
I heat it up to dissolve the sugar and salt, let it cool and soak the meat for 24 hrs.
I then grind fresh black pepper over the pieces and dry.
Smoker is preferred, but if you're using a dehydrator you can add 1 tsp of liquid smoke to the brine

I have done 2 part soy sauce to one part brown sugar with a tsp of liquid smoke. 6-8 hours soak and then in the dehydrater until done. Usually 6-8 hours always turns out good.

Pineapple juice, soy sauce, brown sugar, garlic and red pepper flakes. Sometimes I’ll add a few other things but this is my go to base. Marinade in this solution, pat dry, then smoke or bake.
