A slab of Costco pork belly is at the final stage in its transition into bacon.  After 2-3 hours of smoking we will have BACON!!

I skinned the one I did.  Next one I buy won't skin.  Different recipes say leave on/off.   I had some this afternoon.  I liked it, my wife liked it and our dog liked it.

Waiting on pics! A little maple syrup (pure) gives a nice flavor. Put it in the brine. Putting it on after burns the sugar while frying. Havent bought bacon in a year or so.
