Give me a list of your favorites. Christmas present for grandpa.

I use a Kershaw ProGrade 9.5 inch. Works great. Don't think they make it anymore. But you could still probably find it.
-
Bubba Knife has been a good one. Filleted about 60 salmon with it over the summer. Other option is to get a professional grade one. They use better steel and they hold a better edge. You get good cuts on the fish.

Love mine :twocents:

I’ve had one of these for a long time. Fileted lots of salmon when I had my boat. Now it’s still my go to knive fir all kinds of things including carving big bird during the holidays, and, cutting up the local deer I get. Reasonably priced, holds an edge well, and the sharpener in the sheath actually works ;)

Been filleting salmon for over 50 years and the knife pictured is way the best for me, fast, much cleaner smooth perfect cuts, etc.
I learned from watching a guide friend that for me and for him, a long blade that is curved is way better for filleting any fish than skinny straight ones, which I had used for years. If I replaced this Kershaw pictured, it would be with an even longer curved commercial salmon fisherman knife of the same shape only bigger and longer. The long blade lies flat against a lot of ribs at once and curved blades just always cut meat better for me.
I do like usual fish fillet knives for certain cuts when boning out deer and elk etc.

X2 for cutco

love my bubba blade
-
I did the bubba blade and rapala and a few others but while I was working a boat in Alaska this summer it became clear. That long square tip victornox is the beesknees
-
beesknees is?

i'm partial to dexter russell.

I cut 95% of my fish with a Victorinox 8" breaking knife. Takes an edge easily, holds it well, has some flex but not a noodle.
This is my favorite salmon fillet technique at about 3/4 speed.

Excellent! Did you notice the shape and size of the blade he was using in the video?

Thats interesting. Thanks for posting the video and the comments about a curved knife guys.
I have a Cutco but if i was a better fisherman or wanted a new knife Id have to try that Victorinox
-
fillet knife i use and really like..cheap enough to keep one on the boat and one in the kitchen.

also keep one of these on the boat so you arent tempted to use your fillet knife for breaking down bait or other boat tasks.

The best part about the Victorinox breaking knife is it only cost about $35.

Fungunnin, you are an artist with that knife, and I learned a trick or two watching the video. Old dog, new... ;)

Thanks for the vid, excellent!!!

Lots of nice looking knives. Surprised to not see any with a spoon to clean out the blood inside the cavity under the "spine".

I actually bought a "bearded blades" custom Damascus steel knife this year. The thing was sharp when I got it and hasn't lost it's edge yet. I filleted a lot of fish this this year with it and highly recommend it. The guy who builds them is a vet and gives a tin of money back through TFO.

Works great on blackcod too.... (https://uploads.tapatalk-cdn.com/20181211/17475b184dc3374065bcf984027f7dfb.jpg)

Don't know if they still make them Coleman, I've been using a set for years 6", 9"and 12". Hold a good edge just enough backbone to work. Gave some out as X-mas gifts to the cousins who guide in Canada they are still using them.
-
Great video Fungunnin. It is aptly titled. The meat loss was ridiculously low. Thanks for sharing. Your multiple cuts at the spine is something I am going to try out.

With a sharp flexible filet knife you can go in on the back and cut slab and leave bones in one motion. Twice as quick though not always as pretty.

,x2 for Bearded Blades Todd is a great guy
And makes a nice blade

That is the method I was taught and have always used as well. As far as knives. I still use my dad's old Case. It's not made for production, but it can be sharpened to a razors edge and can double as a boning knife.

There’s always Dunn knives. They get the work done.

If you like cutco check your local costco they are running a christmas special. I was at the burlington store last night and they had the fillet and hunting knife combo on sale. There was a cutco representative running the booth.
