I found a decent sauce recipe online but the dough is the tricky part for me.  Tried twice and it just didnt turn out right.

Simple is best..buy crushed or puréed San Marizano tomatoes and add salt to taste. A dash of Italian seasoning, crushed red pepper and finely ground black pepper. Boom 💥

I go even simpler. Whole San Marzano tomatoes, drain for a bit in a strainer, crush with hands and add a little fresh garlic and sea salt.

Yours sound delicious as well. Use real San Marzano tomatoes, and DO NOT cook this sauce!

I have done similar but I cook the seasoning and add to cold tomatoes. Use olive oil, salt, garlic, basil, oregano and black pepper. Stir it up really well, in sauce pan over low heat so it doesn't really reduce. Not sure why, but it always seems to have a more full flavor

I've had really good luck with this. Important to make it a few days ahead.

Greek yogurt and self rising flour makes a good dough

Victoria’s Maranar. Cook it down in a saucepan until it is thick enough for pizza sauce.
Good stuff.
