Bought a St helens corned brisket about 4wks ago. Been in frig since purchase. Today I split and making smoked corned beef with the small flat as the corn and point pastrami :drool:

I just smoked one last week. Smoked 15 hours, and took four days to eat it all.

Took it off at 9:30 last night. Let it rest till this morning and started bagging. A little salty still good though.
