Well folks it’s that time of year again...CRAWDADS!
The entries for biggest hogcraw waned last year so let’s just make this a brag board. Let’s show them boils too or any other tasty dish to share.
@merkaba93 killed it last year with his large and in charge hogcraw. Plus his dishes were quite slightly with his mighty ability.
@benhuntin can catch bigun's too, where are you?
@HUNTINCOUPLE your sidekick must be a crawdad expert by now.
@Whitenuckles are you gonna put that big pot to use again this year?
@jagermiester I predict another huge boil in your future.
@lewy show us what you got for another all natural plate this year.

I'm in for some braggin'. Had a couple of successful soaks since open, but only 1 decent sized one (just over 6"). I'll get bigger one's posted up when I get 'em. I'll probably do some more crawdaddin' in the next couple weeks before heading to the east coast for a couple more. Hopefully with success.

We went Crawdadding Memorial Day weekend, but only got one. Nothing like my spot was last Labor Day weekend. Is that a seasonal thing (I’m new to this, but my son is hooked)?
Anyway, for dishes, here was my son’s Memorial Day breakfast. Crawdad and blueberry donut.

Usually as the water warms up the crawdads get a lot more active. Oh and my son is a Crawdad nut too...he can't sleep and our big crawdad trip is still two weeks out. :yike:

What's the best way to cook them up while camping?
I use a combo of homemade pots and shrimp pots. The smaller mesh "coonstripe" shrimp pots seem to work best.
There are many ways to cook them up but my favorite while camping is doing a big boil with potatoes, corn, onions, kielbasa, and of course crawdads. Drain when all is cooked and dump out for the big feast.

Ya buddy, I plan on it! Haven't got out yet up here, but plan to the last weekend of June. We went back home in early March and did a few boils and won the people's choice award at the cajun cookoff. Hopefully this cold snap goes away and the water keeps warming up. I'm getting hungry!

Any luck in mountain lakes? I put out 4 pots for a couple hours while fishing with no luck. 300 acre lake at 2500ft west side.

Yeah we catch them all over in the cascades. The pac nw crawdad is the one that’s invasive everywhere else. Literally all over the place in Washington

What are you all using for bait if you don't mind me asking?
I use fish carcasses, preferably from fish of the body of water you are fishing. I have also used canned mackerel with good success as well but need to put the canned fish in a bait bag.

Take it from my friend who's a real Pro at catching them, these are the best waters around for Crawdadn'.
WASHINGTON - Lake Washington, lower Columbia River, Lake Whatacom, Moses Lake, Snake River, Williams lake, Amber lake, and Rock lake.
OREGON - Lake "Billy" Chinook, Willamette Valley streams, Tualatin River and its tributaries, Lake Klamath, Timothy Lake.
IDAHO - Snake River, Upper Salmon Falls, Potlach Creek, Henry's Lake

Maybe we should meet up one day?! There's a lot more that goes into it than just the spices. Timing,temp, garlic heads,onions, sausage, potatoes, exct.... all take spice out of the boil. Timing on everything that goes into the pot is VERY important.

My bait of choice is fresh trout or pink salmon. And all the lakes, rivers and streams around here have them crawling around. Most important thing is to set the pots in the right place and depth. Rocky and downed timber areas are what I like. 10-20 ft of water.

This is about 1/20th of a Cajun boil we did on the 4th. By the way, when you fill a 40 qt stock pot with water and ingredients, it weighs almost 100 lbs - hard to get to the sink. Corn, bugs, andouille, mushrooms, potatoes, 2 packages of boil spice and a handful of cayenne.

Fairly new to this, and my dad apparently talked to a neighbor woman next to where we Crawdad, and she said if the Crawdads have spots on them they can be poisonous, something like a bacterial/fungus type of thing. Is this true, or was she full of it? If true, anybody have any pictures of what the spotting looks like? Thanks.

Never heard of this but I do know there are little white parasites that live on crawdad claws, not real sure what they are called though.

Had some luck with my 4 year old this weekend. She loves going, but lord have mercy when they start crawling all over the deck!....lol :chuckle:

Every time I think about running some traps I look at the rules and get confused and say maybe next year.
How do you guys deal with the non natives as far as killing them before leaving the water and cooking them? How does it effect the way you cook them and the quality of the meat?

I consider myself a Environmentalist, and I also think this is one more of wdfw’s dumbest rules. Don’t kill them and haul them home unless you live really close by, and cook them right away.
Crayfish have a enzyme that causes there meat to break down quickly once killed. If native, take them home live on ice. If non native cook them at the lake. If you are in a mixed species area this rule is very stupid, as I would not keep the invasive species unless I was eating them there. This rule does not do anything to prevent the spread of invasive species, if people want to spread them they still will. It only makes legal crawfishing more difficult. :twocents:

I'll try to remember what was used. I sort of adapted a recipe I had and this turned out quite tasty. When I find it and do that, I'll send it both of your way.

Sorry I didn't post up my recipe:
It's a small recipe so you can use it with a smaller harvest (think 3 lbs of cooked, unpeeled crawdads to get enough meat, I've also used HALF that and it's still turned out quite good without altering the rest of the recipe).
1/4 cup butter
half a bunch of green onions
1/2 lb of crawdad meat (claws or tails)
1 minced garlic clove
2 oz. pimentos (half the small jar)
1 teaspoon cajun seasoning
4 oz. cream cheese
stovetop:
melt butter, add green onions and cook on medium until onions are tender.
Stir in crawdads, garlic, pimentos and cajun seasoning. Cook 10 minutes stirring occasionally.
reduce heat to low
Stir in cream cheese until the contents of your pot are smooth and bubbly.
