So when it comes to mushrooms, the mushrooms decide when opening day is... Yesterday, they decided!

If anyone is interested in walking in the woods and still getting to hunt for something. They grow on Alder dead fall around here. Or if a tree is dead but still standing. Often clumped up. The gills are decurrent, which means they run down the stem. There really isn't anything else that looks much like them around here at this time of the year. But of course do your own research and don't just trust randoms on the internet! Cheers!

Interesting timing.  Our spring flush ended a couple weeks ago outside Issaquah.  Good find and good eats.  Easy and safe to ID.

Well I found all these in Seattle. It was so dry for awhile it probably seemed like it ended, but it all depends on conditions. I'll bet if you go checked your logs again youd be in for a treat! In Puget sound I've found them in almost every month of the year except Dec /Jan. The log in my backyard near Gig Harbor is on its 3rd flush of the year so far! The first two seemed like a warmup to this week. They should all be popping big time now that it finally rained again. Woop woop! Happy hunting

I have yet to figure out what makes a log produce and what doesn't? All my spots have quite a bit of dead Alder laying around yet it's only a select few that fruit the fungus... I have noticed the fresh cut/fallen stuff doesn't seem that great. It seems to take at least a year, but this is purely anecdotal. They seem to like creeks and swamps with skunk cabbage. I end up bushwhacking a lot, and I've been bringing binoculars out on the trail. There is this one log on my property that is about to go bonkers though! And it's right next to a creek.

Well shucks! I do have a park near my place in Gig Harbor that is teeming with Alder and I have yet to see any in there. Like I said earlier, mushrooms can be mysterious (part of why I like em), seemingly no rhyme or reason to it. I do all of my oyster hunting closer to the waters of Puget Sound, and haven't looked inland much. I wouldn't think Buckley would be too far in, but... I guess the proof is in the pudding. At least now when you find some, it will be that much sweeter!

Cannot wait till I figure it out, must just be my luck, was in a spot today 100yds in Avery direction was alders with a swamp in the middle and not a single thing, my son and I combed it 2 times to no avail....

I found a couple of small ones on an old Alder log near one of the beaches. These were fresh, but, unfortunately, they are usually only on the last vestige of these trees and do not seem to flush before the tree is too gone for a repeat.

It could just be that you're a week or two behind being a little farther inland? how high elevation are you?

I went out to a couple areas this weekend that had them in the past and found some. I sautéed a bit up to try out (they are new to me so I always start with a small amount). No ill effects but also not too impressed.

How do people prepare these? Sautéed in butter wasn’t great like chanterelles.

I ran across a couple articles years ago that completely flipped conventional wisdom on its head and I have never turned back... Orthodoxy contends that you never soak mushrooms, some folks won't even run em under the faucet because they will get soggy like a sponge. Continuing on the experts say that when cooking they will release their water and you need high heat so it evaporates or else you're just steaming them. Well... What these adventurous people below have found is that you literally can't overcook a mushroom as long as you aren't burning it. So what is the harm in soaking mushrooms to clean them (which is about 100 times easier AND more effective than brushing) when you're just going to cook out all that water anyways? The answer is none! Then they discovered that if you essentially boil the mushrooms ( I do it in just an inch or two of water in a huge cast iron skillet) until all the water evaporates, which takes about 10 minutes (add more water throughout if you have to) the mushrooms become fully cooked and their  cell structure closes up and they cease to absorb the same amount of liquids as before. NOW is when you add the butter or oil or whatever you were gonna use and sauté until GBD (golden brown delicious). But if you start off with the fat/oil right away like any normal chef will tell you the mushrooms sponge it up and never release  it again giving you a soggier greasier end product. Like I said, I never turned back! I like oysters finished with butter, salt, garlic, and fresh thyme. I like their meaty texture and deep umami flavor. I have found they benefit from a longer cook opposed to a short fast saute compared to chantrelles, and I like them better than chantrelles. In my household that is about a 50/50 split on who likes which ones better. I think my whole house likes hedgehogs and shaggy parasols better than the both of em though! This was fascinating info that truly blew my mind on how much easier it is to clean, handle, cook, and eat any mushroom than most of us have been taught. Cheers!

Yep. They sell cultivated oyster mushrooms at fancy grocery stores and farmer's markets. They are one of the safest wild mushrooms because nothing else grows quite like they do.

Went out Oyster hunting  with my three littles today.  First time for all four of us.  We got a fair amount, two or three gallons I think. We frequently go out for Morels, deer, or elk and come back empty handed, so it was nice to experience some success with the kids.

Check post #24 of this thread... That's how I do. But whatever you do with a grocery store mushroom (agaricus bisporus) will work. They might need a little more time on the heat based on how soggy they got on the log.

Right on! Nothing better than seeing kids satisfied with a day in the woods. How was dinner?

I would really like to see a dedicated mushroom thread. One where people can post pictures of shrooms they find and can have help identifying them. I find all kids out in the world that I would love to know if they are edible. So, in closing.... Can we get a dedicated mushroom thread? @Bearpaw @Jakelope @Woodchuck @bobcat @lokidog  :EAT:

Great idea! My go to for timely help on identification is https://www.reddit.com/r/mycology

The best app for your phone is iNaturalist, and you can use that for anything you find in nature... Mushroom, plant, or animal. Just used it with my kids the other day to identify what kind of dead heron skeleton we stumbled across.

Most mushrooms you find are NOT edible or are unknown. Many of the edible ones are not tasty enough to bother. Makes it easy when your just looking for a handful of species that you can really lock onto every detail of 👍

Nice! I was rooting for ya! Did your kids like em? I started them off on pizzas and omelettes. Now they'll eat a pile of them on the side with dinner, especially my pickiest eater! I couldn't believe that one...

So when it comes to mushrooms, the mushrooms decide when opening day is... Yesterday, they decided!

What's the most reliable way to tell them apart from angel wings (Pleurocybella porrigens) that some say are mildly toxic? The research ive done seems most reliable way is that angel wings grow on conifers and oysters grow on hardwood.

If you soak em in saltwater when you get em in the house I guess that is supposed to get rid of worms and bugs. It might make dehydration take a little longer, but I don't think oysters sponge up moisture as bad as some other species do? I usually rinse em under the sink and meticulously hit em with the brush end of my mushroom knife. We've just been cooking them as we find them and they stay good in the fridge for at least 1.5 weeks. They may last longer, but with a family of 5 they haven't made it longer than that. I keep meaning to dehydrate some, but I never do 🤷🏼‍♂️

Yes that's what I go by too. Oysters on hardwood (I've only ever seen on Alder in the PNW) and Angel Wings on conifer. The angel wings are daintier and not as meaty. I am pretty sure the Angel Wings primarily fruit in the fall too. I'm sure you probably already read, but the only case that I'm aware of, where folks had problems was one single group in South Korea that all ate them at the same time and they all happened to have the same rare kidney condition. What sucks though is it was fatal for them.

I also want to try cooking them and then freezing them. I know folks do that with chantrelles, but we never seem to have leftovers. It's raining again so maybe I'll get some fresh ones here soon, and start working on my preservation game!
