It's been a banner year for the tastiest of fish. I've had more opportunity to fish so far this spring and thought I'd share some photos of our success. We've pulled in 250 kokes so far and we are stuffing the freezer and cupboards with canned fish. Eating a tremendous amount fresh as well. Actually running out of recipes! I haven't kept track of what my friends have kept with me bit I'll bet it pushes our boat total to over 350.

Firing up the smoker right now to prepare for another canning day.
-
WOW!
Nicely done!
-
Outstanding!! Good eats for sure. 👍🥃😉🇺🇸

Prepping the smoker to give the fish a light smoke flavor to be canned. I like to get the smoke rolling before I add the fish to reduce the chance of it cooking beforehand.
-
Now that the smoke is going good I added the fish. About 40 minutes at 180 degrees will warm the fish enough to easily separate the skin from the meat. Doing this now so I'll update as I go.

Nice,I want to try canning it
-
Forgot to add the pic of the fish laid out on the racks.
-
With the smoking process done it was time to pull them out.
-
Beautiful!
-
Next step pull the skin off.
-
The next important step is to remove the fat on the back. It can foul the flavor of the meat if not removed.

I can't imagine the stress of having an 18 to 20" kokanee on! I pout when I lose a 14 incher.

Then into the jars and into the canner at 11 pounds for 80 minutes. Pints.
-
Going to be a late night. 3 canner loads to do tonight.
-
Nice!
I use to wait till I had about 20 lbs, then smoke them up. After Smoking, skin and debone, then place in one gallon Zip-Lock bags. We would always have one in the fridge to put on Salads or whatever, the rest would go in the freezer.
Got awful spoiled having smoked Kokanee around all the time.

Another 38 chubby's this weekend. This load going to the smoker.
