Have two moose roast in a brine right now.  Plan on smoking and then thinly slicing for sandwiches.  First time bro I g anything other than poultry.  How long do you guys like to brine your wild game???   Any other pointers in this process??

Usually overnight although admittedly I haven't tried longer or shorter to determine if there is a difference or what is better.

It takes a long time to penetrate. Some recipes I’ve followed call for days or a week.  I suspect it depends on what you are making.
