Speaking of the top one. I took two chinook just like that home in the last three weeks from the Toutle. And thought I could smoke them Turned out I was wrong! They cut firm and bright pink. I was shocked one was dark on the outside, the other deep red going to dark. Could not tell the difference between them and the bright silvers when fried! They even had a couple sea lice on them, yet were dark. Dunno, it fooled me.

Yea guys your correct, That King was way to dark to have pink meat so I set him free.... Even though it took 25 or so minutes to get him to the bank, he swam away..
His meat would have been a light yellow andnot good to eat. He was supper fun to catch though!
The second one is in my freezer and is looking great!
