debating on picking up a goat on craigslist and butchering it. never had "farm goat". i have had antelope which i believe is a goat species. are goats goood table fare, burger steaks, throw a quarter on the traeger?

We raised Toggenburg goats when I was growing up. We slaughtered the wethers when they were about 6 months(I think). I remember the meat as being quite stringy and kind of being an acquired taste. It is nothing like antelope at all. Antilocapridae Americana is not a goat and is all alone in the classification and is the best tasting game meat when processed correctly, very tender and mild, unlike domestic goat, tough and stringy.

hmm interesting, im glad you said that, cause i havent seen that online, i prob will still try it, but im glad to see a honest somewhat negative review of it, what about sheep meat

Mmmmmmm, lamb. Been too many years since raised my own. Didn't think kid goat was that bad either.

I would agree with Caseknife.
I raised goats for many years and butchered many of them. The meat seemed similar to deer meat. Very tough too!
I finally got away from them (mostly because they were too noisy and I got tired of listening to them). I ended up replacing them with hair sheep.
I'm never going back to goat. I prefer lamb. I know a lot of folks don't care for lamb but I prefer it over goat meat.

If you are going to buy a goat to butcher, make sure you have a pressure cooker, at least in my opinion. As others stated, they can be a tough

I'd try a meat goat breed like boer, a properly finished wether, before I'd write off all goats as the same tough stringy meat.
You eat a dairy goat you'll be disappointed, might as well eat a holstein cow and say it wasn't as good as a prime angus steer.

Not a fan of goat meat. Was told I was eating lamb. It was really tough and didn’t care for it. I was told after the fact it was goat. I can cross goat off the list!!!

People will pretend somethings are good to eat. People will also pretend to be the opposite gender.

I always thought it was like a gamey pork chop, even when cooked over good hardwood. Not terrible, but not something I'd go out of my way for.

:yeah: Set your self up for success and do what kf said. Dairy vs meat breed, properly finished will most definitely make a difference.

There are good goats for meat and bad meat goats. Then there are dairy goats. I’ve had domestic goat that was raised properly for meat, fed correctly and finished correctly etc and I thought it was good. It was a Boer goat. I wouldn’t buy a random Craigslist goat for meat. Those folks don’t have an outlet for those goats other than Craigslist for a reason.

Goat meat is my favorite meat to eat. People who say it isn’t good haven’t had the right goat and are probably eating a terribly fed backyard dairy goat. We eat a lot of goat, as we have a quality herd of registered boers. The meat is flavored like a really good beef. We feed ours to where they actually start to marble. I have Lowline Galloway cattle, mini lamancha goats for milk and I have Icelandic sheep which are good for meat milk and wool. The quality of the meat is always dependent on how you fed the animal. Always... Kind of like people saying mule deer taste different than whitetail. Not on the Palouse. They all taste the same because they all eat wheat and barley and peas, garbs, lentils etc... If you don't finish an animal properly and just decide to butcher it out of nowhere it will not appeal to you. I just had two young bulls butchered this last summer that were only fed grass. The meat has little to no fat and is not very nice for much other than the crockpot or burger. Same with goat or sheep. You CAN season it to perfection and slow cook it and it will be delicious. No matter what kind of meat it is. You just have to figure out the proper seasoning and method of preparing it. Lots of butter is good on lamb. When all else fails, brine it and dry it or smoke it. Steve Rinella would be ashamed of some of you! Lol

Will aging the meat of a properly finished meat goat help in the quality? I've heard somewhere that goat was the most popular meat in the world. I've thought about raising one or two for meat but right now we have no room as we already have a steer, hog and bear in the freezer. I often see goats in close proximity of Hispanic homes....they must know something I don't.
By the way those are some good looking pics of MEAT!

I prefer that my goats PACK my food.... I'll never admit it in front of my packers, but a good mexican goat taco is hard to beat.. :chuckle:

I have had goat and love it. I'm a foody though and I do think based on my recent run of lamb that Sous Vide would be the ticket. Those ribs look extremely tasty.
