This shoulder reminded why I don’t like whole shoulder. Peeling the skin sucks. 11.75 lbs. Probably start smoking Friday evening. Set it an forget it at 250 with mesquite :drool: :drool: :drool:

I bought a small one about 4 lbs. I'm thinking about sous vide for 6 hours and smoking for 4 in my Weber tallboy. Smoking in the Weber takes constant monitoring and feeding. Rubbing the shoulder and using the sous vide helps with imparting the seasoning.

Nice and yes it does. Started smokin about 25yrs ago. :yike: I'm gettin old. :tup: Started with a brickman charcoal. Hated babysitting. Once you figure it out it's not to bad. It's a skill for sure. good eats ;)

Gotta love the A-maze-N smoker gadgets. They are now my only source of smoke in both my smokers and all my grills.

Got the 4.49 lb shoulder in the sous vide bath at 6 AM. I'll plan on taking it out around noon and may smoke for 6 hours. Scraped out the Weber and got it all cleaned up. Got the hickory chunks soaking in a pail of water for an hour.

I'll be using a long-burning Thai rambutan Thaan charcoal as the base under the chunks. It's hard to light because of its density. But once you let it get fully lit in the chimney, it'll burn for 5 or 6 hours. This is similar to Binchotan Japanese charcoal used for hibachi, but rambutan is sustainable with similar characteristics. https://www.thaancharcoal.com/about

No, it's like charcoal but a little more dense. It takes some tending to get it fully involved. But one it's going, you're good for several hours. If at the end of 5 hours I want to smoke more, I just throw on some regular charcoal.

It's a bit tricky keeping a consistent temperature with a Weber, but practice makes perfect. I'm going to smoke this for another 3 hours before my company arrives. It's a keto shoulder, so just spices and painting with bourbon. No sweet stuff.

Late again on this one, it's 4:30 best I could do 7:45. Not to mention $95 in diesel, but I could bring the cigars. :dunno:
