Title: I haven't cooked Trout in years...

Lemongrass stuffed fried trout. Rice. Papaya Salad. Nuoc Cham Sauce.

Caught a limit of trout. Decided to cook this and smoke the rest. Scored the sides. Salted the inside and outside. Dredged in cornstarch, stuck a lemongrass stalk down its mouth and fried it. Tasted great but damn those Thai chilies are hot.

Salad
Take 1/4 cup white vinegar, 1/4 cup sugar and 1/4 tsp salt with 1/2 cup julienned carrots. Soak for at least 30 min or overnight.
Place pickled carrots, 1 green papaya (peeled, halved, seeded and julienned), 1 Persian or English cucumber (julienned)
Toss in 3 tbs lime juice and 2 tbs fish sauce and garnish with cilantro.

Sauce
3 tbs fish sauce
3 tbs white vinegar
2 tbs sugar
2 garlic cloves
1 Thai chili
2 tbs lime juice

Looks amazing. I'm really getting turned on to cooking fish whole these days.
