Has anyone here had and or cooked Javelina?
Any good recipes

I have harvested two javelina and ate them both... Cook it with lots of bacon and onions then feed the javelina to the dog and eat the bacons and onions  :chuckle:
Seriously though, I made teryaki jerky out of some of my last one that turned out delicious.  I also made hams out of the hind quarters and that was very good.  I have not had good luck with just frying up loin... it wasnt very good but the dog liked it.  Best of luck.

I would look for some pork recipes and the hams and jerky sound like good ideas.

I have harvested a lot of wild pigs. Most are very good old board are usually junk sausage if you can stand it. Lots of people say they ain’t worth a darn but mid sized hogs and small pigs can be very tasty. Just got to cook it done. Lots of them have worms and can carry trichinosis.

As far as javelina I’ve eaten it once. Some clients in the Texas camp shot some and I skinned them. They call them musk hogs for a reason. they hung in a cooler for a few days and I decided to make some pork taco’s. Nope won’t be eating any again and I’m not a picky game meat guy, I eat bear and other critters some turn there nose up at. Just tough and strong. Maybe a instant pot with tons of seasons a guy could choke it down. I don’t like to waste things I shoot but they go in the pile with coyotes if I am going to shoot any.

We do pretty much all of them in link sausage. It’s great. Also took it to a bbq place one year and had them do pulled pork. Also turned out good.

Crock pot any cuts for a long time without spices, replacing water. Pull the meat and then add spice or sauce with some olive oil. Chimis or tacos

Nasty tasting critters.  Really the only game meat I couldn’t eat. Not a fan of peacock either I suppose.   Same deal, the meat tastes just like it’s crap smells.  Ugh. Goodluck. 

And Fletch, why would you do that to your dog.  :chuckle:

And for the record, Javelina have nothing to do with pigs.   Their closest relatives are the hippopotamus.   Maybe try googling hippo recipes.

Oh yes not the same thing for sure. Just using another nasty to compare it to  :chuckle: big boar and javelina both = nasty.

Javelina have short meat fibers and taste like bland venison. You probably already know to stay away from the scent gland on the top of their back towards the rear.

Have you actually eaten one?  Or are you just making assumptions based on how the hide smells?
