We got a 1/4 beef from you a few months ago.
I can't find the thread or I'd have commented there.
Bottom line: Your beef is AMAZING
We'd used some hamburger here and there, but honestly when it's in taco's or casseroles it's hard to tell the quality and we just don't tend to do straight hamburgers.
But the other night I grilled up some Sirloins.
I have NEVER had better sirloin..... And I've eaten a lot of sirloin from a lot of places in my life.
AND I can't believe how well wrapped it was. The thick plastic inner wrap was like nothing I've seen. Obviously more expensive than cheap stuff. And each piece obviously wrapped with care.
Your pride shows through in your product.

I was introduced to his pork about 4 years ago.
It gave me confidence with the beef.

Well shucks, it's always nice to know the folks we work to feed appreciate the end product. My family works hard to provide you the same experience we have at our own table, so I appreciate the kind words. That said.... I've got a pork harvest coming up if folks are interested and I'll offer a 100.00 discount on a whole hog for HW orders. Remember our price includes all harvest fees, cut and wrap and delivery to your door* (surcharge discussed for long range folks (yes, I've delivered to Davenport and Deer Park).
I'm also working to expand our beef opportunity, but they take some time to grow into those tasty T-bones.

Chris, do you do your own butchering/wrapping or use the same processor every time?
We typically get a pig every year but the farm we used to get it from switched processors and the last one we had was terribly processed. I had never thought about how big of a difference bad processing could make, but we're looking at other options now. The good reviews on both meat and the processing definitely caught my eye. Would love to support you in the future.

Can i ask what kind of plastic wrap you use?? is it basically the costco shrink wrap.

Chris uses Fox meats in Starwood. At least that is what I have seen come from him. Fox uses 2 sheets of thick plastic wrap. Wrap once and then it’s wrapped again. The sausage is is in one pound tubes.
We all know that the butcher has a large part to play in how the process works and your final satisfaction with the product. Fox meats does a nice job from what I have seen.

Thanks Finnman for your farm support and insight into what Del Fox does for our customers. Yes, double plastic wrap and I've exclusively used Del Fox for the past 8 years due to their great standards and delivery of our products. They even gave me a date accomodation when I was too sick to haul in for my September harvest and they made space for me to harvest on October 24. Dates are booked a year in advance so I will sing the praises of partnering with Del Fox until I no longer am involved in agriculture.

We had a pot roast 2 nights ago.
I remember walking in and smelling it.... and literally being happy that my kids are grown so there would be leftovers. NEVER had a better pot roast.

Do you guys do any custom butchering orders or is it all just a standard order? I have in the past tried to get more "stew meat" than ground from trimmings and more roasts than steaks but I've found the last two cows to be a little lacking in the meat quality from my past supplier, also what breeds are you raising for cattle?

Running Angus across, this particular harvest is a Grady White bull… just good old fashioned crossbreed beef. I can do custom cutting on half and wholes with advanced orders.
That said I’ve got 3 beef harvesting this week available for purchase and delivery in about 3 weeks.

Here's the lowly London Broil he supplied me as part of my purchase. I Treager'd it, turned out as juicy, tender, and flavorful as most store-bought strip steaks. The ribeyes are the best I've ever had.

Between 350-435…. Plus or minus 5%… that’s the goal.
Last harvest just delivered 360,379,434,412,460 (by design and request for giant).

I have so much wild game in my freezer I have to put cinder blocks on the lid to keep it shut but on the occasion I eat beef it's usually a camp or visit with whit and its ALWAYS fantastic! Deal with confidence :tup:

Those ribeyes…..they were amazing! The beef from Chris has flavor! It’s grown right, cut right, wrapped right, and delivered! I just received my custom cut half this week and I got what I asked for.

I do have to thank you though….I got half a liver on my 1/2 beef order, and one kidney, my mother in law almost fell over when I told her what was in the freezer! Lol! Thanks for getting those cuts in the batch!
Ps. I made a beef stew from the stew meat and I used the soup bones for the stock. The stew turned out amazing!!!

I’ll do quarters with a little premium to offset multiple delivery and fuel/feed premiums this year. I want to be able to continue to do this but I have to contain costs.

I haven't had anything other than wildgame in my freezer for over 65 years but this thread is making me think about making room for some beef !!!!!! :EAT: :EAT: :EAT:

When do you think you're doing beef harvest again? I'm down to about two dozen packages of steaks in the freezer, all out of roasts and looking for a new more local source. All these HWers can't be wrong!
