Going to make some breakfast sausage out of antelope and pork fat, and was wondering what % fat to meat I should use? I'm thinking like 20% fat , but not sure.

I do 50% game and 50% pork shoulder. It cooks up great and tastes even better.

Just made some from my buck this weekend. Used costco pork belly turned out great. 5lb batches (3.5lb deer, 1.5 pork belly) that a 70/30 ratio.

:yeah: Although depending on the blend and how fatty the shoulder may be a cut the amount of "fatback" by about half or more sometimes.
My dad used to make a really simple all beef breakfast sausage (something you dont see much anymore) that was about 30% . I havent had it,or anything like it in years but im thinking one of these days I need to try and make a little batch of it.
