I wanna get into making pemmican for the first time, and I was planning on using some of the meat from the buck I shot last year. Well gosh darn if we didn’t accidentally eat up all the packages of steaks and roasts, however I’ve still got some packages of burger. I believe the burger is 70:30 or 80:20 with beef fat.
How do you think this pemmican would turn out if I dehydrated that burger then threw it in the blender to get it good and diced up?

Well SHUCKS....I had never heard of such a thing. Now I have to try it. I just watched a youtube video where a guy dried fruit to put in it. His recipe looked amazing and actually tasty. I want to use bear tallow instead of beef, but otherwise think I will follow that recipe. I imagine it would be a great, lightweight, protein packed food for hiking.
The only reason I could see your burger not working is the amount of fat. The youtube video I watched was very specific to having a very lean cut of meat.

I don't know if it would work on raw meat, but in another group i am in we rinse the meat in boiling water to remove the fat

That was my concern, that since the fat is ground into the venison that it won’t turn out. I’d hate to go through all the trouble and work just for the fat to make it rancid
I’ve seen the recipes with berrys and it looks delicious! I’ve also seen some with peanut butter which could be good too.
Maybe I can trade a buddy some burger for less desirable cuts of steaks

My Grandpa, who was 100% Cherokee, was telling me about Pemmican one day. After he told me his Mom always insisted he always have Pemmican on him for emergencies. I asked him what Pemmican tastes like?
He said, "think of Beef Jerky, that smells and tastes like wet dog. You will only want to eat it in an emergency when there is nothing left to eat. But there was nothing better to have with you if you needed it"
I have tried it, it is nothing I would make out of choice. But it had a purpose in it's day. :tup:

My Grandpa, who was 100% Cherokee, was telling me about Pemmican one day. After he told me his Mom always insisted he always have Pemmican on him for emergencies. I asked him what Pemmican tastes like?
He said, "think of Beef Jerky, that smells and tastes like wet dog. You will only want to eat it in an emergency when there is nothing left to eat. But there was nothing better to have with you if you needed it"
I have tried it, it is nothing I would make out of choice. But it had a purpose in it's day. :tup:
Interesting…well I’m gonna have to try it for myself just to be sure! I just want something that I can make myself to pack with me hunting. I’m sick of bars and the majority of them are filled with awful crap that’s not meant for human consumption.

tried several.receipes for it some years ago. Maybe it's an acquired taste, but all I tried were terrible

If I remember correctly, all the parts of Pemmican (Tallow, dried Venison, salmon, dried berries, nuts, etc.) have to be prepared separately. The Meats, nuts, and berries are dried or smoked separately. Then Tallow is added to hold it all together.
Though there are many regional variations of the recipe for Pemmican.

I was going to say I bet it tastes much better if you form a patty with it, grill it with cheese and then throw a few pickles, ketchup and mustard on top.

Back in the late 80s, I tried a version of Pemmican at the Suquammish yearly Salmon Potluck. It was smoke salmon based instead of venison or beef, and was almost tolerable. Much more favorable the the venison or beef versions I have tried. Though still nothing I would eat out of choice, unless an emergency.

I use somewhat the same recipe as above but no jerky gun. I roll it out on parchment paper and put it in the oven or smoker at 200 degrees on the paper. When it takes a set I flip it and pull the paper. Before it gets too dry I pull it as it will dry out . Using poultry shears or scissors I cut it to size .

Just finished up my first pemmican batch. Ground deer, dried Concord grapes from my yard with seeds, and store-bought fat. (I over-cooked my first rendering of fat from the butcher and I've already used up all my bear fat/oil.) I added some home made syrup because I'm out of honey. Tastes decent. The syrup makes it sweeter, but not too sweet. Don't think I'd use store-bought syrup. Crunchy because of the grape seeds. I'll make another batch as soon as the blue berries are ripe.
Have not, yet, figured out how I want to transport it on the trail. Maybe waxpaper inside Ziploc.

Made my second batch of pemmican. Used blue berries this time. Used canned, ground deer. Dried the meat and berries on separate trays. Into the food processor separately, then more drying, then processeror together. Added the heated/melted fat and about 4 oz of honey. Storing in jars in the fridge just to extend the life, but don't think it needs to be cooled.
Took my first batch on a 5 day backpack trip and just kept it in Ziplock bags. Still delicious.

Im not sure it can ever taste great. I would settle for being edible. Even with a tons of berries I still get bored real quick of it real quick. Birds are the only ones I have ever convinced that it taste good. Your probably aware, but I feel the need to remind you it's survival food and not really designed to be pleasure food.

I tried to make it one time, and my hunting partners called them hockey pucks!
Try the Larabars, they are pretty good , but expensive. I made a version of them for a while, kind of tough on a food processor, think I burned one up, because it is mostly a date/almond paste with other flavorings.
