Title: Question about Bear sausage?????

I'm gonna try making some Bear breakfast sausage myself and was curious on if I should use pork butt or ground pork,  I'm not sure if there is even any difference.  And what would be a good ratio of Bear/Pork to use.  It looks like from I'm reading its about 60/40.   Let me know what you think

i would use the pork butt and i add 15% pork grind the pork and mix with the bear meat then grind again for 25 pounds of meat i use 1 pint of water mix the water and sausage seasoning add the water seasoning to meat mix well should do fine you can mix more pork if you need to and you can go as much as 50 % but i think for keeping the bear flavor in the sausage i would only go 15%

I agree completely with dogtuk. I prefer pork butt but if I can find cheap bacon (whole sale) I will use it. The more pork you use the juicier it will be, but it will also taste like pork sausage.

Good information guys.  If you subsitute the pork for actual bacon, do you still use the same amount of salt and seasonings?  Thanks for the info.
