every time I grill steelhead or salmon my wife rolls her eyes at me when I scrape all of the fatty gray meat off the back of the fillet before I eat it. She says it's a waste to do that.... I've always done it, that gray meat tastes like crap.
What about all of you?

I couldnt figure out why I never liked salmon or steelhead. My budy (Fishcrazy) told me about that grey meat so now I scrape it all off, sure tastes better now ;)

Take your fellet and skin it when you clean your fish it's awesome to eat that way. Flavor all the way threw the fish. And the grayish meat will be felled off.

Skin on any fish will add fishiness to the taste, always best to remove if you can

that's the stuff with the omega-3 fatty acids in it. good fresh salmon won't taste fishy if you leave it in.

Nothing beats a nice fresh king on the BBQ. If you cook your fish in foil then it will probably taste like crap. Try this and then see how much is left on the platter, even that "gray stuff".
1. Fire up briquettes and get them white hot
2. Take salmon fillet and brush melted butter all over the meat side.
3. Season fillet with your seasoning of choice, mine is dill, salt, and Pepper.
4. brush some melted butter on the grill and lay fillet meat side down directly on grill.
5. Cover grill and let cook for 10 minutes or so. (depends on how thick the fillet is)
6. brush more butter on the skin side of fish then flip fillet over skin side down.
cover and let finish cooking. You should use two spatulas to prevent fillet from
coming apart.
squeeze some lemon over meat side and serve.
I guarantee you will never put another poor salmon in tin foil again after trying it this way. Yes I do love the belly meat and the fat.

Here is how I do it. lay the skin side down on tin foil. pour melted butter, sprinkle with garlic salt, and tellicherry pepper. Stick it on the BBQ with cedar and mesquite wood and cook/smoke it. It delicious.... the gray meat still is gross.

I never noticed anything strange about the dark meat....in fact I never understood people who didn't like salmon...
I am a girl though and put nasty things in my mouth :o :chuckle:

living on the east side, as I do... "fresh caught salmon" from Yokes, is not really fresh. I lived on the N. Fork of the Washougal years ago, and know what "fresh" is. I still didn't eat the fat off a fresh summer run steelhead back then.
