So my mom has made some new house hold rules for us kids still at home. I have the duty of vacuuming the stairs once a week and some other stuff, but also we have to cook a meal for the family one night per month, i was originally going to make a home made pizza from scratch, but then with the luck we had on opening day i decided to fry up some duck and cook some rice. The rice was easy just rice a roni, but this was my first time cooking duck on my own, usually i would just help ducksdoom12 at his house. So I made up the breading with some random spices for grilling and frying that i found in the cupboard, and then as i was about to heat up the saucepan i realized we didnt have any vegetable oil and i started to panic, i resorted to using a couple tablespoons of butter figured it would work just the same but maybe a little more fattening, it turned out way better than i thought it was going to and my dad says he "would willingly eat duck" even though he doesnt like the spicy cajuny part of it. so all in all dinner went good, now i just need some new and inventive way to cook duck so i can please everybody.

I wish I could help Elliot but I don't hunt ducks due to the fact I don't like eating them.

bacon wrapped jalapeno poppers are always a favorite but if you want to hide the meat, goose or duck chili are always a safe bet for non duck eaters

those poppers f'in rule. i love those things.
a chunk of duck, a chunk of jalapeno, a chunk of cheese wrapped in bacon cooked till the bacon is done...yum....
i don't like ducks to eat so i don't hunt them much either, but the neighbor and i swap some venison steaks for some poppers every year.

marinate it in garlic, cajun and any other spics that sounds good with some red wine, (cabernet for me), do that for a couple of hours. Pull it out from there and dry it, just dab it dry... rub it with any flavor steak rub you like ( I always add more spicy cajun and garlic to it) and then smoke it for 2-3 hours in apple, hickory or mesquite. Pull out from there and grill it on the BBQ with some onions and enjoy. DO NOT OVER COOK.... medium rare is best. For those of you that love to hunt them but have friends family who don't like the taste this has worked well for me... maybe too well. :yike: Also, if you know how to make jerky... duck jerky is right at the top in taste.... caribean jerk/teryaki and jalapeno are my fav's.... these are fro both duck and goose. I am going to try out the sausage recipe on here soon... sounds great.

U can put a whole duck or goose in a presure cooker and make some rice let the duck/goose cook till it falls off the bone put it in the fry pan with some good teriyaki sauce let simer have that over rice very good just had some tonight from our goose hunt, but we have some much of it every year we make lots of jerky and peperoni and that is always a great snack when u are out in the blind

Best way to eat duck is to stuff it with fruit, onions and all kinds of yummy stuff, bake in the oven til done. Take all the stuffing out, throw away the duck and eat the stuffing. No really, make jerky
