Title: Quick duck recipe ( Duck hash)
Post by: ribka on October 29, 2009, 10:44:10 PM
I shot a 1/2 dozen ducks last week. Breasted them out and was thinking what do do with the meat.

Re ducks: I usually thin slice the breasts, marinate them and make fajitas.
This time, I minced the breast meat and seasoned it with salt, pepper, garlic powder, paprika, chipotle sauce, red wine and set aside. Minced some onions. Put a few potatoes in the micro for 4 min to soften and cut into small pieces.
Fine cut about 1/4 bacon into small pieces.
First sauted the onions and bacon for 10 min. Set aside
Sauted the minced duck beast for 5 min. And did the same with potatoes.
Recombined all ingredients and cooked for 10 min.

Fried an egg and put on top

Great breakfast
