well with the economy in the tank its time to bring back the good ol poor folk food..Milk toast,fried bologna Sammie's..beans.What are your go to meals when times are tough..

Thankfully I am still employed, but I have always watched our food bill anyway.... We always try to keep either cooked pinto beans or rice, or a plain pasta in the frigerator. By keeping these low cost staple foods around, I can make a cheap meal out of one of them.
I like spicy beans and rice.
Large pot of Ramen with some veggies, hard boiled egg and a bit of chicken, cheap, goes a long way...
Mac and cheese.
Split pea soup from scratch...the huge mega bag of split peas...
Buy a full deli counter sized processed ham and trim it, toss the trimmings in the split pea soup above, then cut the entire ham into smaller chunks and freeze for later use.
Any bulk bean or rice.
Basically, I hit Costco, Wallmart or the Cash-n-Carry type stores and buy in bulk, buy only things on sale, never shop when I absolutely need except for the basic necessities for my kids...milk, bread etc.. If a particular item which we commonly use is on sale, I buy a dozen of them. This way I get a good deal times twelve.... Buy the cheap brands or chain labeled items, which ever is cheapest. Save money a few cents at a time...

We were just talking about this the other night, boiling the turkey down to get all the meat off the bones- making turkey noodles with the last of it.
I think cheapest meat out there was always to buy a ham, and use it for everything. Breakfast meat, lunch meat, dinner. Use the trimmings and the bone to season black-eyed peas or beans. Good eating. We were also talking about how mom and grandma never used to drain the pan drippings from meat, they always used it to make gravy or cook rice or noodles in.

docsven, I hear ya' I remember a can of grease my grandma had in a drawer of her oven....it had a tiny screen top, she would pour all grease thru, toss the chunks, and reuse the grease on most meals. Best damned fried chicken you ever ate... The point is she re-used most everything. Didn't waste much...
I argue that one reason we all want such fast foods, is because we are too busy stuck at stop lights, text messaging, web surfing, or catching a tv show.... Remove all this crap and you have alot extra time to hang out in the kitchen and talk, and cook.... Time to actually cook meals...time to watch our foods budget...

we always boil our turkey carcasses to make home made turkey noodle soup.

I remember when I was groing up mom's use to save up leftovers and make a big stew at the end of the week
we just shop cheap,do as much home made stuff as we can, and grow what we can

Mmmm, hamburger gravy. Still one of my favorites from when I was a kid. Hamburger, gravy, onions and mushrooms over boiled potatoes. My wife and I don't waste anything. Carcasses (Carci?) of Turkey, chicken, ducks, pheasants, grouse, hams, etc get boiled up for stock. Beef and lamb scraps get froze to make dark beef stock when we get enough. You can eat a heck of a lot cheaper buy making and cooking your own food versus buying processed food. It's a lot healthier too. And yes, I LOVE fried baloney sandwhiches with some melted cheese on them.

I grew up on fryed bologna and also spam sandwiches. They are still the bomb.MMMMMMMMMMMMM

Forgot about fried spam sandwhiches. That's a staple in camp. My camper is never without a couple cans.
