Do the memory cards have any effect on the quality of the final photos? Or the photos after they have been cropped? Thanks

Nope. The image quality is determined by the resolution of the capturing device (camera). If you crop photos, you can still maintain the pixel resolution. You can never make an image higher resolution than it's original.
