Title: Quick sausage ideas

Ever want to try something new with your burger but don’t want to put a lot of effort or time into it? Have an old package that got buried in the freezer? Why not try one of the sausage spice kits designed for burger?

There are lots of brands as well as flavors and some are better than others. The other day I was at a sporting goods store and picked up a couple packages of Grandma LaMure’s Spice ‘n Slice for Summer Sausage and Breakfast Sausage.

The Breakfast Sausage is really simple. All you do is mix the spices with water and mix with your meat. Form into patties and fry it up.

The Summer Sausage / Bologna mix is also very simple.
After mixing all ingredients you will divide the meat into two equal parts and roll them out to about 12 inches long. Place them on a rack with a drip pan and bake for one hour at 300 F.

These spices/kits were fast and easy to use and I was pleased with the breakfast sausage. The Summer Sausage was ok for what it was, but I would not want to do more then a couple pounds at a time. Even though it was easy to make, there is no comparison to taking the time to get fresh spices, stuffing and smoking.

somthing diffrent than burger all the time is nice.

Like BTKR, I do this all the time and mostly with spice mixes I bought.  Usually they come in a package made for 25 lbs.  I weigh the whole thing and calculate whats needed for 1 lb of burger.
The breakfast suasages are very good.

This also can be done with hamburger to make bulk Italian sausage (my homegrown recipe):

2 lbs hamburger
1 TBSP fennel seed
2 tsp canning salt
1/2 tsp black pepper
1/2 tsp Vitamin G (garlic powder)
1/2 tsp red pepper flakes
1/3 tsp sugar
1/4 tsp ground coriander

Just mix it all together.  Makes a great sausage for pizza.

I've tried them both before not bad and quicker and easier than making true summer sausage or breakfast sausage when you are stuck for time.
