Title: Bear meat?
Post by: J Snow73 on September 24, 2010, 03:59:20 PM
Been readin alot of posts on bear hunting on here and have never got one myself yet, but haven't really tried. I have tried some bear burger once and not really impressed. I don't know if it was the way it was cooked or time of year harvested. Would be interesting to get some feed back on this cause I would like to try it again sometime

the big thing when it comes to bear meat is what the bear was eating, a coastal bear is gona taste more fishing then an inland bear and a bear that eats trash is the worst. i like sage bears, mostly just berrys and grass for them. i shot one that was almost exclusivly feeding on apples. he was yummy.

Bear meat is great as long as they stay away from the trash. I also believe its how fast u get the fat off and take care of it

slice a roast across grain very thin, put in a large zip lock bag w/a little red wine , olive oil, meat tenderizer, minced garlic, bbq sauce or meat rub put in fridge 6-8 hr - take out 1-2 hr before you BBQ - place on a hot grill w/ a bacon press.    :EAT:

a bear roast cooked all day long with fresh veggies in a crock pot is tasty too!  Breakfast sausage is great too.  My last bear was a younger bear, and he was tasty.

I would say that a good bear is about the best game I have ever eaten.  They key, like most have said, it proper field dressing.  You got to get it cooled down as fast as possible. The bear I have eaten, and the one I got this year, I did not trim all the fat off.  The key with the fat, like any fat, is if it is worm out it will go ransed real fast.  keeping it cool is important.

Bear makes decent burger, but awesome sausage and landjauger (sp?) if mixed with pork fat.  Steaks taste pretty good if done right.  I still will make every bear I ever get into sausage type stuff though.  I gave some landjauger from this years bear to a friend of mine, who is a bit of a city slicker, said it was the best tasting thing he has ever had in his mouth.  So yeah, pretty good.

Its all about how you take care of the meat after the kill.
