Title: Elk Sausages

Yesterday I did 10 pounds of snack stix and 10 pounds of kielbasa I used 60/40 elk pork butt I dont usually do the kielbasa much just have not done one that i liked much until now I used Len Poli's recipe it turned out pretty darn good

the snack stix i did the same mix of elk and pork butt and used the sausagemakers premixed snack stick seasoning kicked it up just a tad with some cayanne they turned out great as well
