Title: My 2nd best Salmon
Post by: chukar-ridge-quest on April 08, 2008, 07:31:15 PM
For one fillet --
One small onion, sliced not diced. One to three cloves of garlic, sliced or diced. One 14 OZ can of stewed tomatoes. Plus one cup of white wine.  Reduce over med/high heat till onions are soft and most, if not all, of the wine is absorbed. Let "sauce" cool to ~ ambient temp. (room/outside/whatever) just cool enough it doesn't start to cook the salmon.

Place a fillet or two in an aluminum foil "boat". Spread "sauce" over salmon.  BBQ over low to low/med heat till meat "flakes" with a fork.

No BBQ-- Oven at 300 for ~ 40 min, or until the meat "flakes"

APPROX 10-20 min
Maybe thirty if its a thick Chinook

Try it you wont be disappointed .
