OK, I've got about 10 lbs of flank I've been buying to make homemade jerky. I like it moist and not dry. I've got a Bradley smoker and my oven. I've never attempted to make it, so I don't want waste all that good meat on a bad recipe. Got any moist recipes for the smoker or oven ?

Funny you should ask. I made 5lbs yesterday from bottom round. Bought a mix/cure from mitchlich's, I'll try and help if I can though.

CAMPMEAT, I use one 2 liter bottle of coke pop, 1 cup of brown sugar and 1/4 cup tender quick. mix up, throw the meat in for 3 days then smoke until done.

OK, what's the coke do ? Has acid in it so it must break down the toughness to make it tender ?
