Title: smoking previously frozen salmon? time to clean out the freezer

i have about 40lbs of salmon, silvers and samish king, sitting in the freezer..... time to fire the ol smoker up and make some candy

anybody ever smoke frozen salmon? its been vaccuum sealed most is good but some of it is a lil crystal-y...

i use one of those smoker/bbq things... ive gotten pretty good with it, but i figure i need to cut it thin and go for a cold smoke to get best results.

what do you guys say?

I used to always wait till I had a big batch in the freezer before smoking it all, let it thaw in the brine. No one will know the difference.

i was planning on either just smoking it all, to hell with frezer burn... or feeding the less than desirable cuts to the inlaws... i did that last year with 2 ancient pinks.... they tought it was northwest cuisine at its greatest....... muwhahahahhahaha :chuckle: :IBCOOL: its amazing how salmon cooked over an open fire on the beach will change the flavor  :chuckle:
