Title: OK, how about your favorite Razor Recipe?

Got a killer Chowder? What else do you like to do with this yummy little dudes... I do chowder, but do NOT have a tried and true recipe... I also love to bread them and fry them!! (Ole Buckhorn and my FIL bring me razors)

Here's mine.  First, do not open and clean them with hot water!  It partially cooks them and makes them tough.  Take you clean clams, dry them off, (so the egg will stick), run them through an egg wash, and coat them with Ritz cracker crumbs.  (I've tried other crackers...I use Ritz).  Then place them on a foil-lined cookie sheet.  Drizzle a little butter, (not margarine) on them.  Place the cookie sheet in a pre-heated oven either on broil, or on 500* for two or three minutes.  (I cook them on broil for 2 or 2 1/2 minutes per side).  Keep an eye on them, as they will burn quick.  Flip them and cook them on the other side.  I like this method as it seems to keep the clams more tender, and it's MUCH easier to clean up afterwards as there is no grease splatter.

I have a good chowder recipe, but it's more for Geoducks, and Horse clams.

I'd still be interested in the recipe.... thats interesting with the baked clams, I'll give that a try!

Anyone smoke a razor????

I agree and always scream "Blasphemy" when chowder is mentioned in the same sentence as razors. Just like throwing tenderloin in the burger pile.  :bash:

A light breading and a couple seconds in some hot oil is my fav.

Sky, you know me too well!

I prefer to pan fry breaded razors in some olive oil. Probably the same as everyone else here...  We use an egg wash and then dredge thru cracker meal...., turn them as infrequently as you can to avoid breaking the breading up....

When I clean clams at home, I save all the diggers to the side and freeze these for my annual Seafood Extravaganza at Deer camp each year.  :EAT:

I can or pressure cook all the siphons.  Save the juice from the pressure cooker, it is the best tasting clam stock ever.  The pressure cooked siphons then get vacuum sealed and frozen.  Chop either the canned or pressure cooked clams and simply add them to spaghetti sauce and server over linguine.  Linguine with red clam sauce, very tasty.
