We went to my folks for dinner the other night and my mother threw this concoction together. I don't know what the heck it's called aside from awesome. This is really good and I can see this as a great BBQ side also. Personally I might try some other/better cheese and a little more heat.
Enjoy.
Boil 1 cup Quick Grits (by the hot cereal in the grocery) in 4 cups water with 1 tsp.salt for 3 minutes. Remove from heat and stir in 1/4 stick butter and 2 jars "Old English Cheese" (with the jar cheeses by the crackers in grocery). When butter and cheese are melted, whisk in two beaten eggs and then stir in one 4 oz. can mild green chiles (or spicier if you like). Stir in 1 bag frozen white corn. Place in buttered casserole dish and bake uncovered at 325 until firm...about 50 minutes.

Sounds good (sans the chiles). I have grits several times a month anyway but have never tried anything other than butter, salt and peppa. I'll give 'er a try!

SOUNDS AMAZING WHAT DO YOU GUYS THINK ABOUT MAYBE PUTTING IN ABOUT A CUP OF CHOPPED UP SMOKED HAM IN WITH THIS DISH ANY THOUGHTS?????
