These are mine.
The middle one is a 7in. Japanese shun. If I could afford all "shun" knives I would buy them. They are amazing.
The cleaver is 1/4" thick. ........A work horse........ Keeps the kids (and wife) in line :chuckle:
The cleaver was a gift (hand-me-down) On one side is inscribed "rough justice". Not sure what that means, but I can only imagine. It doesn't get a ton of use, but when it does it is very needed.
Outside of the paring knife, the shun gets the most work in my kitchen. They keep a veeeeerrrrry sharp edge, just a few touches from the steel periodically.

Most of mine are from the island of misfits..... Not the best looking set of knives....
We received a nice matching set of knives with the ol' display block....when we married, but to be honest.... they sort of sucked. So I jammed them in the bottom cupboard and keep moving them to the back of the low cupboard everytime we move. :chuckle:
My fav's are from long ago when I shopped goodwill and value village to outfit my first kitchen. They have all been re-ground by myself over the years, and I keep touching them up with ceramic sticks every month or so.... I did recently purchase a few Henckles....and found they are pretty good. I now save them for meat cutting only..... Still daily using the pre-marriage goodwill specials that I have had for 30+ years...

My favorite are my cutco knives, there amazing. They never have to be sharpened or honed and they stay sharp and last forever. The best thing is I got them from my mom and there still guaranteed because of their forever guarantee of the knives. They cut anything perfect, no ripping or tearing cuz there not a serrated or straight edge. Plus my my mom has carpletunnel so the universal wedge lock is awesome cuz its designed to fit all hands. The best thing is there all dishwasher safe.i use them everyday there amazing! I want a cleaver so bad for like bigger meats for this season. Here is the set im gunna get next.

I'm an ex-chef and keep two knives; a 10" shun and a 3" paring knife. That's all I ever use other than hunting knives for hunting.

pianoman i would like to know what steels you are useing or recomend? i have a variety of stuff,home made,hand me downs.ginsue ect..but my fav's are ones i got after an uncle passed that was a meat cutter. the steels are worn real bad (as well as the knives) so i bought a new one & it just distroys the edge. as a chef what would you recomend ?? also what exactly is a shun ? and maybe we could discuss cutting boards (wife & i have a dispute)

as far as cutting boards. I like wood, have several bamboo, maple, but for chicken/meats, my wife wants me to use the "white" one.

thanks for the site, as far as cutting boards i like the wood but my wife bought a glass one after seeing something about chicken & says the wood gets into your food while you are cutting. she has sence all but distroyed my favorites & that was the reason for asking Pianoman about the steels. chefs know all the best stuff.

My wife and I use Wusthof. I prefer them over the Cutco's.

Can anyone explain how these cutco knives retain sharpness? Seems like more than a few of you are committed to them.

I used Forshner knives at work, the steel was german and very high quality for the price. If you need a cheaper workhorse the Dexter- Russel ones are good. I used Victorinox paring knives always. They stay sharp a long time. Otherwise the Heinkel sets are awesome. Whatever you get, stay away from Taiwan, China and other Asian made steel. Just my :twocents:
