Title: making venison breakfast sausage, can i add pork butt

I have been calling the local stores and silvana meats and I can't find anyone that has pork fat, so I was wondering if I can just add pork butt?

Yup. Pick one up at Costco and mix it 50/50 with your venison. Let us know how it works out.

K sweet, I will let you know, going to be processing a doe today, just got a brand new kitchen aid. Mixer so I bought the meat grinder attachment we will see how it works out

yep that is all I use in it, I do a 30/70 mixture

Same here.  That is what I use.  The percentage you use will be up to you.  I tend to like a 30/70 or sometimes a 20/80.  Depends on how much fat comes on the pork butt.  I try to find the one with the most fat on it when doing sausage. 

I also like to a add a little to my burger.  Helps it to not be as dry.  For burger I do about

I tried a 30/70 mixture with deer couple weeks ago from an in-law and it was delicious good luck and pics sound good! :drool:
