Going to be getting High Mountain Home's summer sausage kit. What's a good meat ratio? I was thinking 20lb deer/10lbs pork but, not sure. Also, if that's correct, what's going to end up happening is 13lbs deer/8lbs beef/10lbs pork. Not as much venison in the freezer as I'd hoped

I got the same plans after things settle down a little, I picked up two of the high mountain summer sausage kits,they make 30 pounds each, I make alot of polish sausage and experiment with different combinations, I like a 50x50 mix with what ever game you want to use and eather pork butts or picknics, depending on what you can get, the pork butt is the best, some folks like a little less pork to get a more of a game taste, its all personal preferance. I even make goat sausage, its a lot like venison, this will be my first time making summer sausage so any tips you pick up will be appreciated.

I use 70/30 mix, elk or deer/pork shoulder for summer sausage and pepperoni. It's not much different than what you are planning.

2/3 wild game 1/3 pork.

I use hi mountain summer sausage kit, and I used 22 lbs deer and 8 pounds pork shoulder.

I have been using 3 to 1 ELK/Pork Sausage mix and it has been very very good.
