Title: Help me w/ a bear ham

Never cooked bear roast/steaks/ or ham. I've got about a 3 lb spring bear ham I would like to try this week. Any tips or ideas?

Hell yes.

Set it out on the counter a few hours to get the meat to room temp.

Sear all edges in a hot skillet, with some heavy olive oil and pepper. Keep rolling it around until all edges including the ends are seared caramel color.

Now, place into a deep pot or crock pot, add some water, a can of beer, some diced onion, garlic,  and cook it slowly for a few hours at a med/low heat, just to simmer. (I like to cook my veggies on the side until they are all done, then add but...) You can add cut red potatoes, carrots, diced celery, large mushroom chunks. We are looking for a rustic bear roast here. Not really a stew, but you get the idea. I would add a dash of salt, a few pats of butter-not much, maybe even some barley around the bottom of the pan...  Twnety minutes before you think it is done, reach in and cut it open to make sure it has cooked thru. At the ten minute mark, I personally add a few shots of red wine, and re-do the garlic and pepper.

Eat this one with some homemade bread torn into chunks.  Beer in a mug.

Enjoy.

Hey, thanks. I really enjoy cooking, escpecially wild game. These animals deserve to be taken really good care of and cooked up as best we can!

And, come to think of it, my hunting buddies arent respecting me like I  deserve to be respected. Here I toil and fuss all day in the campkitchen and make wonderfull eats, and for what? So they can just eat it, belch and head for the fire?  (Holy crap...I am starting to sound like a female...! )

I need to go freshen up....

I almost fell on the floor I was laughing so hard.

Do they make you wash dishes too?

I think I wanna go to elk camp with your group.  I'll help in the kitchen and even do this dishes! ;)

Just like ice said , pull it out and let it get to room temp , put olive oil all over it , then bake it on a cedar plank . Cook until the edges start to turn black , pull out of the oven, enjoy ..  Oh , and if it is a fall bear     Throw the ham away and eat the plank.    :chuckle:

you might try smoking it with hickory then put bbq sauce over it then wrap in foil and cooktill its done.I do this all on a weber grill using briquets.it will be very tender.I also make tamales out of the roasts.good luck

Yep, went out and bought all the ingredients, thawed the ham, and when I unwrapped it I discovered they had smoked it.  :dunno: I had no idea, so we just heated it up. It was really good too. I'm definately a spring bear fan.

I posted somewhere about it but not sure where or when.
