Title: Jason's first batch of smoked cheese

Since I finally bought a AMNPS I decided it was time to smoke some cheese. I picked up some mild Cheddar, Colby and Pepper Jack cheeses, did a 50/50 mix of Apple and Hickory pellets, smoked them for 2.5hrs and temp never got above 68 degree's :tup:. hopefully they got enough smoke :dunno: I let you know how it tastes in a few weeks.

Cheese takes smoke fast and well, it seems to me that the cheaper cheeses take more of it and that it takes much longer for them to mellow.

I did a batch of Tillamook white cheddar that was unbelievably good in only a week and just got progressively better after that. I'm working on my last batch now that I did just before Thanksgiving, it was all store brand cheese and I would say that it is just now getting pretty good. I smoked this batch for 1.5 hours just as I did the one before it.

So if it tastes like campfire the first time you try it just keep it in the fridge and try again every couple of weeks.

Looks really good btw and good choice on the chips.

+1, longer it sits, more it mellows out.  I still like 1.5 hours on most cheese, little less on some.  But as FC mentioned, some cheeses are different.
But if you really need to eat it quick and it's too smokey, cut the surface off and sell em as nicotine patches :dunno:

By the way, it look great.  If you end up liking how it turns out, try some dublinger :tup:  It's good plain but it's even better smoked.

Thanks for all the good comments guys :tup: I also put 5lbs 3 oz of jerky meat in the dehydrator, I used  nw_bowhunter recipe, it turned out great, after it was done I ended up with 1lb 13oz of jerky :o It's about time I do more BBB

Couldn't take it anymore so I had to try some cheese last night. tasted a little like campfire but once you got past the crust it's not so bad. That bag didn't last long at all.

I did about 20 lbsof mixed cheeses last night and this morning. Can't beat the smell while sealing them up. My house smells pretty good right now.

Well its been a little more than two weeks since I smoked my batch of cheese, opened another bag today
(our 3rd bag now) and it's mellowed out a bit, actually it's pretty damn good :tup:
