Title: collagen casings ?
Post by: uplandhunter870 on March 23, 2012, 07:36:46 PM
today i did up about ten pounds of venison/pork pepperoni and the only casings i had on hand were collagen casings, they are the 26mm and i filled them basically full without bursting them.

question is this is the first time ive used collagen casings and ive read they dont stretch all that well, so since i filled them full is there any risk of the casings bursting when i put the pepperoni in the smoker tomorrow?

Thanks
Uplander
