I went to the freezer today with the intent to use up all my old elk scraps, antelope, moose.
Made six types of sausage today. About 100 lbs
First- High Mountain Summer usage Mix. 20 lbs. I added grated jalapenos and cheese.
second- Breakfast sausage. sage, brown sugar , and fresh grated ginger, salt pepper
third- Dinner sausage. Ground juniper berries, salt, pepper. Fresh italian parsley, fresh chives,eggs milk, allspice, nutmeg,
fourth- Hot sweet Italian sausage Lots of fresh garlic, fennel, red pepper flakes
Fifth- Norwegian Potato sausage. Grated potatoes , grated onions, salt , pepper, all spice. One to one ratio potato to meat. Very good
Sixth ground up a bunch of elk for burger. threw in some bacon ends and garlic.
