I think it depends on how bad of shape they are.  Probably why you hear both yes and no.

Hoof rot does not affect the meat, but if the animal get emancipated from hoof rot it causes other issues which may cause the meat to be bad.

I've had meat from at least three elk that had hoof rot, and the meat has been fine. It doesn't smell. If it did, I wouldn't have eaten it.

I saw one killed last year near Cathlamet that actually had lesions in the meat of the legs.  The processer he took it to would not accept it.

I think it does boil down to how badly afflicted the animal is.

I've seen a couple elk that had it so bad I wouldn't even think about eating them.

You can tell when the meat's been tainted.  I took a friend out a few years ago during archery season and he shot a cow with hoof rot. The meat below the knee on bad. The color was off, and it had an odd smell. He was worried about it and wanted to dump the whole animal! :yike:

The guys at Stewart's Meats said that it's fine to eat as long as the meat looks and smells good. Just stay away from the stuff that looks and smells bad, and you will be fine. :twocents:

The one I knew about was taken to Bolar's in Castle Rock.  They refused to take the guys elk due to the lesions in the meat.

Sounds like that animal was pretty bad. I can see why they'd turn that one away. The one I saw came out of Ryderwood. Everything looked good above the knee, so no real meat was lost.
